VISUAL ANALYSIS OF ZUCCHINI MINIMALLY PROCESSES IN ACTIVE MODIFIED ATMOSPHERE, A GEOSTATISTICAL APPLICATION

The objective of this work was to study the possible application of geostatistics in visual analysis of minimally processed zucchini with active modified atmosphere, which are non - georeferenced data. Ambience atmosphere (T1), vacuum (T2), 4% O2 + 5% CO2 (T3), 4% O2 + 6 % Of CO2 (T4), 4% of O2 + 7% of CO2 (T5) and 4% of O2 + 8% of CO2 (T6) and analyzed visually by unselected and untrained evaluators for a 12-day hedonic scale for Attractiveness and intent to purchase. It was applied geostatistics with GS + software. It was verified that the purchase intention presented a strong spatial dependence. The treatments at 4% of O2 + 7% of CO2 (T 5) and 4% of O2 + 8% of CO25 (T 6) presented the largest areas in the kriging maps for the purchase intention for the hedonic scale values greater than 4, in Throughout the observation period.
